2013-14 Farm to School: Hands-On Chef Training and Smarter Lunchrooms

The Division of Food, Nutrition and Wellness (FNW) is offering excellent training opportunities to schools throughout Florida during the 2013-2014 school year. A qualified trainer and/or appropriate related training materials will be provided to the school.
4-6 hours of hands-on training for District Food Service Managers and Staff Training provided by Chef David Bearl, Certified Culinary Educator and Certified Chef de Cuisine credentials with the American Culinary Federation.
Training based on seasonality and tailored specifically for your district’s purchase list for fresh produce. Review of knife skills, food preparation methods, and other competencies. Recipes and skills focused on simple cooking/processing techniques to minimize preparation times due to volume and nutritional valuations.
Smarter Lunchrooms Movement training – low-cost/no-cost ways to re-invent your lunchroom, proven to increase sales and consumption of healthier menu items. All activities and menu development linked to the New Meal Pattern.
Cost varies based on purchase list, but guaranteed to be less than $10.00 per person.*Note: timing differences depend on desire for more in depth or basic overview of Smarter Lunchrooms Movement training.
Prior to training, Chef Bearl will need the District purchase list and their food preferences for training purposes. After training, Farm to School staff will provide support and collect data for you as it relates to changes associated to Smarter Lunchroom implementation.
